Four rules the kitchen keeps.

Seasonal

The menu follows what is actually growing. It changes through the year and nobody writes it down a month ahead.

Local

Odia dishes, bought close by. This is the food of the region rather than a hotel's idea of it.

Mostly vegetarian

The everyday table is vegetarian. Tell us what you eat when you enquire and we will plan around it.

Cooked fresh

Each meal is made for that meal. It is why the dhaba serves at set times rather than all day.

The campus eats together. Timings shift a little with the season and with retreat schedules — the front desk will confirm them when you arrive.

Retreat guests follow a diet planned with the doctor, cooked in the same kitchen and served at the same times.

On a retreat week the kitchen cooks to the plan the physician sets after your assessment — portions, timing and ingredients included. It is the part of the week most guests say changed how they eat at home, because it never feels like a punishment.

Tell us in advance

Allergies and diets, before you arrive.

A small kitchen can accommodate almost anything with notice and very little on the day. Put it in your enquiry and it reaches the kitchen before you do.

Anything you cannot eat, and how severe it is.
Vegan / Jain
Tell us at least a few days ahead so the kitchen can shop for it.
Non-vegetarian
Ask what is available on your dates — the everyday table is vegetarian.
Children
Ages and anything they will not eat, so the kitchen keeps something simple back.
Day visitors
Ask whether the dhaba is serving non-resident guests on your dates.
Groups
